Semolina

Production quality of Semolina is assessed through several parameters, one of which is the amount
of black/brown specks in the final product, considered to be impurities.

The monitoring of impurities enables the users to assess their semolina production. It is known
that good quality, usually expensive durum wheat from locations such as New Mexico, Arizona,
North Dakota and the Canadian Prairies produce clear semolina with very little amount of impurity.

In countries such as North Africa, Middle East and Japan the quality of wheat is dependent on
where it is imported from. In this case the wheat needs to be screened for impurities, so the
wheat milled is as clean as possible.

In Morocco where durum wheat is imported and the semolina quality requirement is high, there is a
move towards on-line quality monitoring using Branscan's Fluoroscan F4000 systems.

The
Fluoroscan SemoCheck F4000 online system uses UV light to pick up the yellow specks of
fluorescent aleurone and the dark specks of bran in Semolina and other flours.

The on-line system can
objectively check the quality of the product every 15 seconds with
consistent results meaning the sensitivity of durum wheat screening can be optimised according to
customer demands.
